White Bread - fluffy:
Add in this order
- 1 & 2/3 cup of water
- 1 & 1/2 teaspoons of salt
- 2 tablespoon of brown sugar
- 1/4 cup of vegetable oil
- 3 & 1/2 cup of bread flour
- 1 cup of high protein flour
- 2 tablespoons of baking powder
- 1 tablespoons of baking soda Note: no more baking soda
- 2 1/2 teaspoons of yeast
2 lbs. loaf, setting 1 "normal", with medium crust Note: Came out slightly pretzel like, reduce baking soda and add 1 egg, and more brown sugar

Whole Wheat Cinnamon Raisin Bread - Hopeful fluffy:
- 1 & 3/4 cups of water
- 3 tablespoons of vegetable oil -1 & 1/2 teaspoons of salt - or none
- 3 tablespoons of sugar - using brown sugar instead
- 2 tablespoons of nonfat dry milk using 1/2 cup of milk
- 2 tablespoons of vital wheat gluten
- 4 & 1/2 cups of whole-wheat flour*
- 2 teaspoons of bread machine yeast
- 2 tablespoons of cinnamon -1/2 cup of raisins

machine setting of 3 on medium crust.
Hypothesis Increase in yeast and baking powder will increase the fluffiness of the bread, while the increase in brown sugar will increase the sweetness. Results: pending...
12/16/2022 Whole Wheat with Raisins: 1 cup of water 3 tablespoons of brown sugar 1 1/2 teaspoon of cinnamon 1 1/4 teaspoon salt 2 table spoons of butter, soft 3 cups of Whole Wheat flour 2 1/2 teaspoons of machine yeast 3/4 cup of raisins 2 table spoons of baking powder
machine setting of 3 on medium crust.
Result: Was thick hardy bread, would like a little more sweetness. Good for toasting and applying thin slices of butter.
